- 800 g potatoes
- 1 cup milk
- 5 tablespoons olive 'extra virgin olive oil
- 1 egg yolk
- 4 tablespoons grated Parmesan cheese
- rosemary
- sage
- Thyme (one tablespoon of finely chopped)
- Salt and pepper
Preparation:
Boil the potatoes in their skins in salted water for about half an hour. Peel and mash while still hot potato masher in a pan. UN oil, salt, chopped herbs, grated cheese and stir.
Heat the milk. Place the potato mixture on the stove and gradually add the hot milk. Mix with a wooden spoon and then mix well.
Turn off the heat. Add the egg yolk, stir and let cool.
Lay a sheet of baking paper on baking tray. Brush them with a brush dipped in oil.
Place the potato mixture into a pastry bag. Squeeze and drop small mounds in the shape of rosettes on the sheet of baking paper.
Bake in preheated oven at 200 degrees for about a quarter of an hour. The rosettes have to take a nice golden color. If necessary, operate the grill for a few minutes.

Tips:
If you do not have a pastry bag, use a plastic food bag. Fill with the mixture and then cut a corner of the bag. Pressed the mixture well and squeeze the bag like a pastry bag.
