Brush up in a Pan Chicory

Information:
Servings: 6

Ingredients:
  • 1 kg chicory
  • 1 handful of raisins
  • 1 clove of garlic
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper

Preparation:
Trim the chicory, the roots removed, damaged leaves and tough part of the stem. Wash in plenty of water, drain and cut the leaves into small pieces. Toss the chicory in salted water and boil for ten minutes. Pass the vegetables in a colander and let drain well.

Heat two tablespoons oil in a pan with a clove of garlic. Add the chicory and beans previously soaked raisins in warm water. Stir, put the lid on the skillet and cook for ten minutes. Add salt and pepper and serve.

Tips:

Wanting to give more flavor to the dish you can add a few anchovies and a handful of pine nuts.
