Ingredients:
- 1 green broccoli (about 1 kg)
- 1 onion
- 1 clove of garlic
- extra virgin olive oil
- vegetable broth (optional)
- 1 cup milk (optional)
- 100 g cottage cheese (optional)
- salt and pepper
Preparation:
Clean the broccoli, remove the tough outer leaves and ridges. Divide oatmeal and wash them under running water. Put them in a colander and let drain for a few minutes.
Slice the onion and fry together with a clove of garlic in a pan with the edges a bit 'high where you put a couple of tablespoons of oil.
Add the broccoli flakes and cook for a few minutes, add salt and then cover the broccoli with hot water or broth if you want the cream is tastier. Put the lid to the pan, reduce heat and simmer for about half an hour.
Once cooked remove the garlic and remove a few flakes of broccoli for the decoration of dishes.
Take the blender and blend the broccoli right in the saucepan and reduce it all in cream.
The cream is ready to be served.
Tips:
- Depending on whether you want the cream more or less creamy you need to increase or reduce the cooking liquid (water or broth).
- If you want the cream more creamy, melt in the cream a little 'cottage cheese or even just a little' milk.
- You can serve the cream with slices of toasted bread.
