Ingredients:
- 500 grams of chicken cut into slices the thickness of a finger.
- 200 ml. of coconut milk.
- 1 tablespoon red curry paste.
- 3 red peppers.
- 20 ml. fish sauce.
- 20 ml. vegetable oil.
- An eggplant coarsely chopped (or some small Thai eggplants).
- A few leaves of sweet basil
Preparation:
- Heat the oil in a wok over medium heat.
- Mix in the curry for 1 minute.
- Add the fish sauce and chicken.
- Stir and brown the chicken.
- Add the coconut milk.
- Bring to a boil.
- Add the eggplant and peppers, stir well.
- Remove from heat and serve decorated with a few basil leaves.
