Pappardelle with Wild Boar Sauce

Information:
Servings: 4

Ingredients:
  • 250 grams of minced meat of wild boar
  • 500 grams of tomato paste
  • taste (onion
  • carrot and celery)
  • 1 glass of red wine
  • 3 tablespoons olive oil

Preparation:
Heat oil, add the minced meat and taste, fry well. When the meat is well browned add the glass of wine, let evaporate, add a glass of water and simmer for 30 minutes (add more water if necessary).

Combining then the tomato puree, salt and pepper and let cook for 15 minutes.

In the meantime, you put the pasta to cook in salted water. Drain al dente, season with the sauce and serve piping hot with the possible addition of Parmesan cheese.
