Ingredients:
- 200 g of finely ground cornmeal
- 100 g of rice flour
- 100 g of potato starch
- 100 g butter
- 125 g sugar
- 1 lemon (or vanilla)
- 1 whole egg
- 2 egg yolks
- 1 / 2 packet of baking powder
- cold milk
Preparation:
Working eggs and sugar and mount them to foam.
Mix the flour with the baking powder, lemon zest and melted butter, add the egg yolks with the sugar mounted.
Working up to mix everything, and if necessary add a few tablespoons of milk. Shape into a ball, wrap in foil and store in a cool hour.
Working a little dough at a time, using more flour to roll out the dough with a rolling pin shortbread from which to derive the thickness of an inch low. Place the cookies on parchment paper lightly. Bake for 10-12 minutes at 180°
