Cauliflower Gratin Reduced

Ingredients:
  • 1 cauliflower (about 1 kg)
  • 4 to 6 potatoes (optional)
  • 3 onions
  • 1 / 2 liter of semi-skimmed milk (or skim for extremists, but unlike low calorie and loss of taste)
  • 40 g (about 2 tablespoons full well) cornstarch
  • 70 g grated cheese (Gouda is slightly less fat than Emmental)
  • Salt, pepper, nutmeg

Preparation:
  1. Cut the cauliflower into florets and wash.
  2. Cook it in boiling salted water for 10 minutes, then drain it. Peel the potatoes, cook them in water for 15 minutes.
  3. Drain, cut into thick slices.
  4. Chop onions finely. Brown them in a dry pan until they are translucent and begin to brown. In a bowl, mix the cornstarch with a little milk. Pour remaining milk over the onions, add the dissolved cornstarch and, over low heat, whisking until thickened sauce.
  5. Pepper and nutmeg in the end.
  6. Place the cauliflower florets and sliced ​​potatoes in a baking dish. Top with bechamel sauce lightened, sprinkle the grated cheese.
  7. Bake in a preheated oven at 240° C (Gas 8), cook for 10 minutes, finishing with a few minutes if necessary under the broiler.
