Ingredients:
- 1 cauliflower (about 1 kg)
- 4 to 6 potatoes (optional)
- 3 onions
- 1 / 2 liter of semi-skimmed milk (or skim for extremists, but unlike low calorie and loss of taste)
- 40 g (about 2 tablespoons full well) cornstarch
- 70 g grated cheese (Gouda is slightly less fat than Emmental)
- Salt, pepper, nutmeg
Preparation:
- Cut the cauliflower into florets and wash.
- Cook it in boiling salted water for 10 minutes, then drain it. Peel the potatoes, cook them in water for 15 minutes.
- Drain, cut into thick slices.
- Chop onions finely. Brown them in a dry pan until they are translucent and begin to brown. In a bowl, mix the cornstarch with a little milk. Pour remaining milk over the onions, add the dissolved cornstarch and, over low heat, whisking until thickened sauce.
- Pepper and nutmeg in the end.
- Place the cauliflower florets and sliced potatoes in a baking dish. Top with bechamel sauce lightened, sprinkle the grated cheese.
- Bake in a preheated oven at 240° C (Gas 8), cook for 10 minutes, finishing with a few minutes if necessary under the broiler.
