Ingredients:
- A bream of about 1.5 kg
- 500 g potatoes, peeled and thinly sliced
- 200 g onion cut into thin slices
- Juice of two lemons
- 15 cl of olive oil extra virgin
- 1 teaspoon salt
- 3 cloves garlic
- 4 strands of saffron
- A good teaspoon of salt
- 2 tablespoons sherry vinegar
- 2 red peppers cut into julienne.
Preparation:
To make your baked sea bream:
- Preheat oven to 200 degrees C. 25 minutes before baking the fish.
- After cleaning the fish, sprinkle with lemon juice inside and outside.
- Lower the oven to 180 degrees C.
- crush in a mortar with coarse salt, garlic, saffron and parsley.
- Add 4 tablespoons oil and 3 ounces of water. Mix well and set aside.
- oiled baking dish carefully where you will cook and serve fish. Arrange the potatoes and onion rings and pour over the mixture all crushed in the mortar.
- oven for about twenty minutes.
- Place the snapper on the potatoes, sprinkle with 2 or 3 tablespoons oil and bake at 200 º C for 15 to 20 minutes. Finish!
Tips:
- Combine the vinegar with a few spoonfuls of pan juices and freshly ground pepper.
- Remove the snapper from the oven and garnish with a sprig of parsley. The drizzle with the vinegar mixture and a very fine julienne made with the bark of a lemon and pepper.
- Serve your baked sea bream hot.
