Albondigas Soup Recipe

Information:
  • Preparation Time: 10 minutes
  • Cooking Time: 1 hour 25 minutes
  • Total Time: 1 hour 35 minutes
  • Servings: 8

Ingredients:
Meatballs
  • 1/2 lb lean ground beef
  • 1/2 lb chorizo sausage, casing removed (not the fully cooked kind)
  • 1 egg, beaten
  • 2 garlic cloves, minced
  • 1/2 carrot, minced
  • 1/2 cup cooked rice
  • 1/2 cup cilantro leaf, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon ground cumin

Albondigas Soup
  • 6 cups chicken broth (I usually use nonfat and low sodium)
  • 1/2 cup onion, chopped
  • 3 stalks celery, cut in chunks
  • 1 (16 ounce) can diced tomatoes (with nothing added)
  • 1/2 teaspoon ground cumin
  • 1 teaspoon oregano
  • 1/2 cup cilantro
  • 1 large zucchini, sliced
  • salt
  • pepper

Preparation:
  1. Make the meatballs first: Combine everything and mix thoroughly.
  2. Form meatballs and roll between your palms (Otherwise, meatballs will fall apart in the soup).
  3. You should make around 20 to 24 meatballs, set aside.
  4. Combine chicken broth, onion, celery, tomatoes and their liquid, cumin, oregano and cilantro leaves in a large pot.
  5. Bring to broil, and reduce heat and simmer for 10 minutes.
  6. Drop meatballs in the soup (Make sure the soup is slightly boiling, the meatballs need to be cooked quickly).
  7. Return to simmer and cook another 10 minutes.
  8. Add zucchini and cook 10 minutes.
  9. Season with salt and pepper, to taste.
  10. You could top the soup with cooked rice, or just by itself.

Bolognese Sauce Recipe

Information:

Ingredients:
  • 2 tablespoons olive oil
  • 4 slices bacon, cut into 1/2 inch pieces
  • 1 large onion, minced
  • 1 clove garlic, minced
  • 1 pound lean ground beef
  • 1/2 pound fresh mushrooms, sliced
  • 2 carrots, shredded
  • 1 stalk celery, chopped
  • 1 (28 ounce) can Italian plum tomatoes
  • 6 ounces tomato sauce
  • 1/2 cup dry white wine
  • 1/2 cup chicken stock
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • salt and pepper to taste
  • 1 pound pasta

Preparation:
  1. In a large skillet, warm oil over medium heat and saute bacon, onion and garlic until bacon is browned and crisp; set aside.
  2. In large saucepan and brown beef. Drain off excess fat. Stir in bacon mixture, mushrooms, carrots, celery, tomatoes, tomato sauce, wine, stock, basil, oregano, salt and pepper to saucepan. Cover, reduce heat and simmer one hour, stirring occasionally.
  3. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  4. Serve sauce over hot pasta.

Information:

Ingredients:
  • 6 eggs, beaten
  • 1-ounce Parmesan, grated
  • 1/2 teaspoon black pepper
  • Pinch salt
  • 1 teaspoon butter
  • 1/2 cup chopped roasted asparagus
  • 1/2 cup chopped country ham
  • 1 tablespoon chopped parsley leaves

Preparation:
  1. Preheat oven to broil setting.
  2. In medium size bowl, using a fork, blend together eggs, Parmesan, pepper, and salt. 
  3. Heat 12-inch non-stick, oven safe saute pan over medium high heat. 
  4. Add butter to pan and melt. 
  5. Add asparagus and ham to pan and saute for 2 to 3 minutes. 
  6. Pour egg mixture into pan and stir with rubber spatula. 
  7. Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set up on top. 
  8. Sprinkle with parsley.
  9. Place pan into oven and broil for 3 to 4 minutes, until lightly browned and fluffy. Remove from pan and cut into 6 servings. Serve immediately.

Information:
  • Preparation Time: 10 minutes

Ingredients:
  • 1 tablespoon olive oil
  • 2 cloves of garlic, chopped
  • 2 tablespoons diced onion
  • 1 inch of fresh ginger, peeled and chopped
  • 4 cups fresh broccoli, cut up
  • 1/2 pound of fresh spinach leaves
  • 3 parsnips, peeled, cored, chopped
  • 2 ribs of celery, trimmed, chopped
  • A handful of fresh parsley, roughly chopped 
  • Fresh water, as needed
  • Sea salt and ground pepper, to taste
  • Lemon or lime juice

Preparation:
  1. Using a large soup pot, heat the olive oil over medium heat and stir in the garlic, onion, and ginger to season the oil. 
  2. Add the broccoli, spinach, parsnips, celery and parsley, and stir a bit until the spinach wilts and collapses.
  3. Add just enough water to cover the vegetables. Remember the spinach will cook down quite a bit, so don't add too much water at first. You can always thin the soup later, if you need to.
  4. Bring to a high simmer, cover the pot, and reduce the heat to a medium simmer. Cook for fifteen minutes or so until the veggies are softened.
  5. Use an immersion blender to puree the soup.
  6. Taste test. Does it need brightening? Add a squeeze of citrus.

Options:
  • To make this a creamy soup add a dash of So Delicious Coconut Milk.
  • Serve with a spoonful of hot cooked rice in the center of the bowl.

Tzatziki Recipe

Information:
  • Preparation Time: 10 minutes
  • Difficulty: Easy
  • Servings: 12

Ingredients:
  • 1 pint sour cream (or Greek-style super thick yoghurt)
  • 1 English cucumber, peeled, grated on a box grater, salted lightly for 5 minutes and squeezed between the hands to remove (the long, thin, almost seedless kind)
  • 3 garlic cloves, mashed to a paste
  • 1/3 cup olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon minced fresh dill (optional)
  • salt

Preparation:
  1. Just mix everything up together until it is all blended and the oil has emulsified into the yoghurt/sour cream. Taste for seasoning, and add salt if you think necessary. Put in a resealable container.
  2. Allow to 'sit' in the refrigerator for at least 2-3 hours before using to allow the flavors to come out.
  3. This wonderful meze (we do not think of it as a sauce here- it is a thick 'salata') is used to counterpoint rich, bbq'd meats (like souvlaki/shish kebab), but can be used in more diverse ways.
  4. Place a small plate full on your dinner table for people to scoop up small amounts onto their bread (preferably crisp-baked pita).
  5. Fry up some zucchini or eggplant slices (dredge in flour and fried in olive oil) and serve with a dollop of tzatziki on top.
  6. Use as a salad dressing.
  7. A dip for crudites.
  8. Note: If I have time, I often lightly salt the grated cucumber and put in a colander to drain, then squeeze out water as per usual. This eliminates even more water.

KFC Honey Barbecue Wings

Information:
  • Total Time: Less than 30 minutes
  • Difficulty: Medium
  • Number of persons: 6

Ingredients:
  • 20 chicken wings, tips removed.
  • 2 cups flour
  • 2 eggs
  • 2/3 cup milk
  • 1 bottle KC Masterpiece Original Barbecue sauce
  • 1/4 cup honey
  • oil, for deep frying

Preparation:
Wash chicken wings, remove the tips; cut the two pieces in half. shake off excess water. place eggs and milk in a bowl and mix well. set aside. Mix together Barbecue sauce and honey, set aside. Put flour in bag, shake wings to lightly coat. roll wings in egg wash and toss back in flour again. you want a fairly heavy coating of flour. Repeat 2-3 times.

Heat oil to 350 degrees. Fry wings until golden brown. Remove and drain on paper towels. preheat oven to 325 degrees. Dip each wing in BBC sauce and place on greased cookie sheet( pieces should not touch each other). Bake 15-20 min. until they no longer look shiny.

I have a creamy soup recipe for you! The name is Avgolemono Soup recipe. These soup will pair good with the acidity, fruit and slight sweetness of a Kabinett Riesling from the Mosel-Saar-Ruwer region in Germany.

Avgolemono Soup

Information:
Servings: 6

Ingredients:
  • 3 quarts chicken stock, boiled down to 9 cups
  • 2/3 cup rice
  • 1 1/2 teaspoons salt
  • 1/4 cup lemon juice, from about 2 lemons
  • 3 tablespoons chopped fresh parsley or dill
  • 1/4 teaspoon fresh-ground black pepper
  • 4 eggs

Preparation:
  1. In a large saucepan, bring the stock to a boil over moderately high heat. Add the rice and salt. Reduce the heat and simmer, covered, until the rice is just tender, about 25 minutes. Add the lemon juice, parsley and pepper.
  2. In a large bowl, whisk the eggs until frothy. Bring the soup just to a boil and slowly pour it into the eggs, whisking constantly so that the eggs do not curdle. Serve at once.

Udon Soup

Information:

Ingredients:
  • 2 packets of udon soup base
  • 900ml water
  • 1/2 big carrot
  • 1 packet of Enoki (Japanese mushroom)
  • 1 packet of silken tofu (buy the one for soup type)
  • artifical crabmeat
  • a bit of chili padi to taste
  • salt to taste
  • 2 small packet of fresh udon noodles (normally there's 3-4 small packets in one big packet)

Preparation:
  1. Bring 900ml of water to a simmer in the pot.
  2. Add in the udon soup base and stir.
  3. Add carrots, enoki and tofu to the simmering soup. Cover and let the soup simmer about 1 - 2 mins.
  4. In another pot of water, cook the udon noodles for approximately 2 minutes.
  5. Drain the noodles and place into a bowl.
  6. Pour the soup over the noodles.
  7. Garnish with your favourite toppings (tempura, mochi, etc...)

  • 6 fresh salmon steaks
  • 50 g butter
  • Salt, pepper

  • 4 dl dry white wine
  • 250 g cream
  • 50 g grated Swiss cheese

Preparation:
  1. The steaks should be 2 cm thick. Wash them, dry them in paper towels, salt and pepper them them on both sides. In a large frying pan, brown them in 50 g of butter.
  2. Remove the fish and put it in a baking dish. In a bowl, mix the tomato paste, white wine, grated cheese and sour cream lightly beaten, pour this mixture over the salmon steaks, add a few sprigs of dill. Bake in hot oven 230 degrees (gas mark 7).

Baked Sea Bream

Information:
  • Preparation time: 20 Minutes
  • Cooking time: 30 Minutes

Ingredients:
  • A bream of about 1.5 kg
  • 500 g potatoes, peeled and thinly sliced
  • 200 g onion cut into thin slices
  • Juice of two lemons
  • 15 cl of olive oil extra virgin
  • 1 teaspoon salt
  • 3 cloves garlic
  • 4 strands of saffron
  • A good teaspoon of salt
  • 2 tablespoons sherry vinegar
  • 2 red peppers cut into julienne.

Preparation:
To make your baked sea bream:
  1. Preheat oven to 200 degrees C. 25 minutes before baking the fish.
  2. After cleaning the fish, sprinkle with lemon juice inside and outside.
  3. Lower the oven to 180 degrees C.

  • 1/4 cup egg substitute

  2. Sift cake flour, baking powder, and baking soda into a medium-sized mixing bowl; set aside. In a large mixing bowl, cream the butter with an electric mixer. Add SPLENDA® Granulated Sweetener and egg. Beat until smooth. Add the egg substitute and vanilla. Beat briefly to incorporate. Add applesauce and half of the sour cream. Beat until smooth. Add the sifted flour mixture and beat at medium speed just until smooth. Add remaining sour cream and blend just until incorporated and batter is uniform. Set aside.
  3. Make Filling: Place 1/4 of cake batter in a small bowl. Add brown sugar and cinnamon. Stir well.
  4. Place 1/2 of the remaining cake batter into prepared pan. Top with filling. Swirl with knife. Top with remaining batter.
  5. Bake 50 to 60 minutes or until a toothpick inserted near the center comes out clean.

Kentucky Fried Chicken

Ingredients:
  • 1 whole chicken, cut up and marinated
  • About 2 liters of shortening (for cooking)
  • 1 egg, well beaten
  • 250 ml milk
  • 200 grams of all-purpose flour
  • 2 1/2 teaspoon of salt
  • 3/4 teaspoon pepper
  • 3/4 teaspoon of mono sodium glutamate
  • 1/8 teaspoon paprika
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon baking powder

For Marinating
  • 2 tablespoons of potassium chloride
  • 2 tablespoons kosher salt
  • 4 tablespoons mono sodium glutamate
  • 1/8 tablespoon garlic powder
  • 1/3 cup of chicken base and
  • 5 cups water

Preparation:
Mix together above noted ingredients for marinate and soak the chicken in it for 24 hours in the refrigerator.
Preheat the shortening in a deep-fryer to 365 degrees F and mix the beaten egg and milk in a medium bowl blend it nicely. In another medium bowl, add the remaining coating ingredients like flour, salt, pepper and mono sodium glutamate.

Transfer each piece of the marinated chicken to paper towels so that excess liquid can drain off from the chicken pieces. Take one piece of chicken at a time, first dip in egg and milk then coat the chicken with the dry flour mixture, then the egg and milk mixture again, and then back into the flour. Make sure that each piece is coated generously. Keep aside the chicken pieces on a plate until each piece has been nicely coated.

Now drop the coated chicken pieces, one piece at a time into the hot shortening. Fry 4 pieces of the chicken pieces at a time for 12-15 minutes, or until it is golden brown. Occasionally stirring the pieces to fry them evenly, after frying the pieces transfer them to paper towels to drain for about 5 minutes. Now its ready to serve.
