Ingredients
  • 2 pounds ground beef
  • 1 (1.25 ounce) package taco seasoning mix
  • 1 1/2 cups water
  • 1 (15 ounce) can mild chili beans
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (14.5 ounce) can stewed tomatoes
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 1 (4 ounce) can chopped green chilies
  • 1 (1 ounce) package ranch salad dressing mix

Directions
  1. In a Dutch oven or large kettle, cook beef over medium heat until no longer pink; drain. Add taco seasoning and mix well. Stir in remaining ingredients. Simmer, uncovered, for 15 minutes or until heated through, stirring occasionally.

I have been making taco soup for years and my family loves it! It is perfect for cooler weather. The only thing I do differently is I do not drain or rinse any of my beans or corn. I add maybe a cup of water but if you like it more soupy then add more. Usually I add it to the cans to get the rest of the juices left behind. We do not like it real spicy so I leave the green chilies out. I have made it with red kidney beans and I like it but my family doesn't. This is a good wholesome meal that gets better and better each day for leftovers.

I really don't like deer. I had never even tried it until I married an avid hunter who likes to bring his game home. No matter how much I soaked the meat in salt water, buttermilk, etc etc I could never get over the gamey taste... until this recipe! It is FANTASTIC! I soaked the meat overnight in cider and in BBQ sauce all day. Half of it I used turkey bacon and the rest regular. (regular was better, turkey wasn't bad) It was delicious!! Be very careful not to overcook it or it will be tough and not as tasty. Thick sliced bacon isn't necessary. FINALLY, I have a way of making venison that we can both enjoy. Thank you! ***What's better then grilled venison wrapped in bacon? Adding a slice of onion and wrapping it up with the meat. Yum.

I only had 1lb of venison so I adjusted accordingly. Also, I used KC Masterpiece for the bbq sauce. Really good bacon flavor on the outside with a sour flavor on the inside. Next time, I would like to use meat tenderizer because it was still difficult for me to chew because I have TMJ. Husband said it was the best venison he has ever had!

This was absolutely the best venison I have made and have ever eaten. I have cooked a lot of venison in my day, and was getting bored of doing the same old recipes. I came across this one and WOW, my family loved it and said it was even better than steak. It was so easy to do, especially if you have extra time to marinate, the only thing I did different was marinate in the apple cider for over six hours. This is an excellent recipe and will be a definitive in my menu planning.

This recipe is for 4 servings and you need about 5 hours and 15 minutes to make it. It sounds too long, doesn't it? Don't worry, because Grilled Venison Backstrap recipe is easy to do.

Ingredients
  • 2 pounds venison backstrap, cut into 2-inch chunks
  • 1 quart apple cider
  • 1 1/2 pounds thick sliced bacon
  • 2 (12 ounce) bottles barbecue sauce, your choice

Directions
  1. Place chunks of venison into a shallow baking dish, and pour enough apple cider in to cover them. Cover, and refrigerate for 2 hours. Remove, and pat dry. Discard apple cider, and return venison to the dish. Pour barbeque sauce over the chunks, cover, and refrigerate for 2 to 3 more hours.
  2. Preheat an outdoor grill for high heat. Charcoal is best, but if you must, use gas. Remove meat from the refrigerator, and let stand for 30 minutes, or until no longer chilled. Wrap each chunk of venison in a slice of bacon, and secure with toothpicks.
  3. Brush the grill grate with olive oil when hot, and place venison pieces on the grill so they are not touching. The bacon will kick up some flames, so be ready. Grill, turning occasionally, until the bacon becomes slightly burnt, 15 to 20 minutes. The slower, the better. Dig in, and prepare to want more!

This one is delightful.

I got so excited when I saw the show, I went out and bought a cast iron dutch oven, with the coal lip and all.

Made it once on the camp fire in the cast iron, but I burnt it because I put it right on the hot part of the fire. Forgot the quantity of coals part, but it was still good.

Anyway, did it again using Door County, WI cherries in the oven. It was yummy. put cherry syrup and whipped cream. OOOO-la, la.

Did it again, using apricots from a can, substituting sweet and condensed milk for the liquid (milk and then adding 2 tablespoon of milk and one tablespoon of apricot juice. It was different, very deserty but mucho delish. Again served with whipped cream, every body liked it.
Try it on 390 degrees.

I will continue to experiment, and thanks to Chef Alton, I even got a clue.

Dutch Oven Cherry Clafouti Recipe

Ingredients
  • 12 ounces fresh or frozen cherries
  • 2 large eggs
  • 1/4 cup sugar
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • Butter, for the Dutch oven

Directions
  1. Preheat an oven to 400 degrees F or prepare charcoal for cooking outdoors by heating coals in a chimney starter until hot and ashy.
  2. Butter the bottom and sides of a 5-quart Dutch oven. If using fresh cherries, rinse, stem and pit the cherries. If using frozen, place the cherries into a colander and allow to thaw completely before using. Discard the juice. Spread the cherries evenly over the bottom of the Dutch oven.
  3. In a mixing bowl, whisk together the eggs and sugar until frothy and lightened in color. Add the milk, vanilla and flour and whisk to combine. Pour the batter over the cherries.

Oven baking:
Bake on the middle rack, uncovered, for 30 minutes or until golden on top and a knife comes out clean when inserted into the middle.

Outdoor coals:
Place 18 to 19 coals on a Dutch oven table. Place a cooling rack, or other wire rack, that is at least 2-inches high, directly over the coals. Place the Dutch oven on the rack directly over the coals. Cover with the lid and place 22 to 23 coals on top. Cook with the lid on for 25 minutes. Remove the lid and cook for another 5 minutes or until golden on top and a knife comes out clean when inserted into the middle.

Allow to cool for 30 minutes before removing from the Dutch oven, slicing and serving.

I am rating this recipe to include the changes I made to it. After looking at the recipe I thought this was a good base, but sounded as thought it might be a bit on the bland side. Sooo..I made a few changes. First I added some garlic. I use the pre minced garlic in the jar so I added about 1 to 1-1/2 teaspoons. I also chopped up a green bell pepper and added it to the mix along with a can of chopped tomatoes with green chilis (rotell tomatoes)to give it a little extra bite. Also in addition to cooking the soup with a ham bone, verses a ham hock, I also cubed up a good amount of left over ham and added it into the soup at the end. The result was yummy and would make again!!

  • Grease a 12x15 inch pan.
  • In a medium-size pot, combine sugar, brown sugar, corn syrup, evaporated milk, whipping cream, and butter. Monitor the heat of the mixture with a candy thermometer while stirring. When the thermometer reaches 250 degrees F (120 degrees C) remove the pot from the heat.
  • Stir in vanilla. Transfer mixture to the prepared pan and let the mixture cool completely. When cooled cut the Carmel into small squares and wrap them in wax paper for storage.

  1. Very very lightly grease the pan
  2. Use a large kettle; mixture actually triples in size during cooking phase
  3. It will take from 30 to 40 minutes to get to 250 degrees
  4. Make sure caramels are cooled or they will stick to wax paper. If too cooled, they will be hard to cut. I put mine in freezer for 5 minutes after about 10 minutes sitting in pan on counter top. They were really easy to cut and wrap

Superb! Following other reviewers' suggestions, I added 1 tsp. vanilla, 1/2 tsp. nutmeg, and 3/4 tsp. cinnamon to the muffin batter. I also used canola oil in place of the melted butter and 1/2 c. white sugar and 1/4 c. brown. In the crumb topping I increased the cinnamon to 1/4 tsp. These are very good and will go in my 'keepers' file!

Great recipe! I realized I didn't have any baking soda in my pantry when I got started so I just added two teaspoons of baking powder instead and they were still delicious. I modified the recipe just a bit by adding 1/8 tsp of cinnamon to the flour and upping the cinnamon to 1/4 tsp for the crumbs. Again delicious! My husband is not a fan of banana nut bread and he LOVED it. That says something! I will definitely make these again.

These are very good. I used a mini muffin pan and baked them for 11 min. They turned out great! I think next time I will add cinnamon and vanilla to the batter but as written they were yummy! :)

This recipe was very good. I don't have the patience or counter space to make my own pie crust so I bought a pack of 2 crusts from the store. Since the top was a solid crust I cut holes in it for ventilation, but didn't realize until later that the recipe probably says to use a lattice top so that the topping goes into the pie. So next time I would probably toss the apples with some of the topping, then pour some on top. Since my topping wasn't really going into the pie I probably threw out more than half of it. Also I tossed the apples with cinnamon and nutmeg. Got a lot of compliments at work with this pie.
