The pie consists of a pumpkin-based custard, ranging in color from orange to brown, baked in a single pie shell, rarely with a top crust. The pie is generally flavored with nutmeg, cinnamon, cloves, and ginger.

This pie is often made from canned pumpkin or packaged pumpkin pie filling (spices included); this is a seasonal product available in bakeries and grocery stores, although it is possible to find year-round.

Ingredients
  • 1 (15 ounce) can pumpkin
  • 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 (9 inch) unbaked pie crust

Directions
  • Preheat oven to 425 degrees F. Whisk pumpkin, sweetened condensed milk, eggs, spices and salt in medium bowl until smooth. Pour into crust. Bake 15 minutes.
  • Reduce oven temperature to 350 degrees F and continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean. Cool. Garnish as desired. Store leftovers covered in refrigerator.

This was so much simpler than I was worrying pumpkin pie would be! It would have been even simpler if I had used canned pumpkin but I was happy to use the sugar pie ones! Great recipe, thanks Eagle Brand! Also thanks to the folks who suggested pre-baking the shell a bit.

My daughter wanted Pumpkin Pie for her birthday and this was the recipe I made...It was awesome! The best I've ever tried. I didn't have the ginger or nutmeg. So improvised with 2tsp Cinnamon and a 1/2tsp allspice & also used a graham cracker crust.....it was such a hit with all my family that I've been nominated to make the pumpkin pies for Thanksgiving! Soooo soooo good :)

Cream of Organic Carrots, Croutons and Almond Milk With Cocoa

Information:
  • Preparation time: 20 Minutes
  • Cooking time: 30 Minutes

Ingredients:
  • 750 g carrots bio
  • 150 g of kernels
  • 15 cl whipping cream
  • 75 g onion, finely chopped frozen
  • ½ teaspoon chili paste
  • 4 slices of bread extra softness
  • 1 teaspoon cocoa powder and a half
  • Salt and pepper

Preparation:
Cream of Carrot Bio:
  1. Wash and peel carrots and cut into pieces.
  2. Fry the chopped onion in two tablespoons of oil and ½ teaspoon of chili paste.
  3. Add the carrots when the onions begin to brown. Cook for 5 minutes. Cover carrots with water and cook over low heat for 20 minutes.

Almond milk:
  1. Mix the almonds with the cream then place in a saucepan.
  2. Boil the mixture and let steep over low heat for 20 minutes.
  3. At the end of cooking, filtering with a strainer, salt, pepper, and reserve aside almond milk thus obtained.

Croutons cocoa:
  1. Cut the slices of bread and croutons in large sauté pan with a little fat. Once browned, add the cocoa powder.
  2. Filter and collect the juices of carrots. Place carrots in a blender and mix slowly adding the juice until the right texture.
  3. Prepare the soup of organic carrots in bowl then add the almond cream and croutons.
