Detox Soup Recipe

Information:
  • Preparation Time: 10 minutes
  • Cooking Time: 15 minutes
  • Total Time: 25 minutes
  • Difficulty: Easy

Ingredients:
  • 1 tablespoon olive oil
  • 2 cloves of garlic, chopped
  • 2 tablespoons diced onion
  • 1 inch of fresh ginger, peeled and chopped
  • 4 cups fresh broccoli, cut up
  • 1/2 pound of fresh spinach leaves
  • 3 parsnips, peeled, cored, chopped
  • 2 ribs of celery, trimmed, chopped
  • A handful of fresh parsley, roughly chopped 
  • Fresh water, as needed
  • Sea salt and ground pepper, to taste
  • Lemon or lime juice

Preparation:
  1. Using a large soup pot, heat the olive oil over medium heat and stir in the garlic, onion, and ginger to season the oil. 
  2. Add the broccoli, spinach, parsnips, celery and parsley, and stir a bit until the spinach wilts and collapses.
  3. Add just enough water to cover the vegetables. Remember the spinach will cook down quite a bit, so don't add too much water at first. You can always thin the soup later, if you need to.
  4. Bring to a high simmer, cover the pot, and reduce the heat to a medium simmer. Cook for fifteen minutes or so until the veggies are softened.
  5. Use an immersion blender to puree the soup.
  6. Taste test. Does it need brightening? Add a squeeze of citrus.

Options:
  • To make this a creamy soup add a dash of So Delicious Coconut Milk.
  • Serve with a spoonful of hot cooked rice in the center of the bowl.

Sausage Gravy Recipe

Ingredients:
  • 1 pound Bob Evans® Original Recipe Sausage Roll
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • Salt and black pepper to taste
  • 8 prepared biscuits

Preparation:
  1. Crumble and cook sausage in large skillet over medium heat until browned.
  2. Stir in flour until dissolved.
  3. Gradually stir in milk.
  4. Cook gravy until thick and bubbly.
  5. Season with salt and pepper.
  6. Serve hot over biscuits.
  7. Refrigerate leftovers.

Tzatziki Recipe - Easy and Tasty

Tzatziki Recipe

Information:
  • Preparation Time: 10 minutes
  • Difficulty: Easy
  • Servings: 12

Ingredients:
  • 1 pint sour cream (or Greek-style super thick yoghurt)
  • 1 English cucumber, peeled, grated on a box grater, salted lightly for 5 minutes and squeezed between the hands to remove (the long, thin, almost seedless kind)
  • 3 garlic cloves, mashed to a paste
  • 1/3 cup olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon minced fresh dill (optional)
  • salt

Preparation:
  1. Just mix everything up together until it is all blended and the oil has emulsified into the yoghurt/sour cream. Taste for seasoning, and add salt if you think necessary. Put in a resealable container.
  2. Allow to 'sit' in the refrigerator for at least 2-3 hours before using to allow the flavors to come out.
  3. This wonderful meze (we do not think of it as a sauce here- it is a thick 'salata') is used to counterpoint rich, bbq'd meats (like souvlaki/shish kebab), but can be used in more diverse ways.
  4. Place a small plate full on your dinner table for people to scoop up small amounts onto their bread (preferably crisp-baked pita).
  5. Fry up some zucchini or eggplant slices (dredge in flour and fried in olive oil) and serve with a dollop of tzatziki on top.
  6. Use as a salad dressing.
  7. A dip for crudites.
  8. Note: If I have time, I often lightly salt the grated cucumber and put in a colander to drain, then squeeze out water as per usual. This eliminates even more water.

KFC Honey Barbecue Wings

Information:
  • Total Time: Less than 30 minutes
  • Difficulty: Medium
  • Number of persons: 6

Ingredients:
  • 20 chicken wings, tips removed.
  • 2 cups flour
  • 2 eggs
  • 2/3 cup milk
  • 1 bottle KC Masterpiece Original Barbecue sauce
  • 1/4 cup honey
  • oil, for deep frying

Preparation:
Wash chicken wings, remove the tips; cut the two pieces in half. shake off excess water. place eggs and milk in a bowl and mix well. set aside. Mix together Barbecue sauce and honey, set aside. Put flour in bag, shake wings to lightly coat. roll wings in egg wash and toss back in flour again. you want a fairly heavy coating of flour. Repeat 2-3 times.

Heat oil to 350 degrees. Fry wings until golden brown. Remove and drain on paper towels. preheat oven to 325 degrees. Dip each wing in BBC sauce and place on greased cookie sheet( pieces should not touch each other). Bake 15-20 min. until they no longer look shiny.
