Ingredients:
  • 1kg chicken
  • 1 onion
  • 1 clove garlic
  • 2 green pepper
  • 2 cans coconut milk
  • coriander
  • 3 cm ginger root
  • Salt, pepper
  • 3 cup rice
  • 2 tbsp. a tablespoon of olive oil
  • 1 lime

Preparation:
To make a delicious green curry:
  1. Peel onion, garlic and ginger. Cut any rough. Mix all with the juice of half a lime, coriander and chillies. Book.

Ingredients:

  • 40 g breadcrumbs

Preparation:

  • 400 g celery
  • 300 g yellow peppers
  • 500 g tomatoes

  • 100 g salted capers
  • 100 g pine nuts
  • 50 g sugar
  • ½ cup white vinegar
  • 1 bunch basil
  • extra virgin olive oil
  • coarse salt and table salt

Preparation:
Removed the part of the eggplant stem. Wash and dry. Do not peel them, cut into cubes a lot about an inch and deposit it in a colander. Sprinkle with coarse salt. Ingredients:
  • 500 g chicken nuggets
  • 100 g mortadella (a slice)
  • 100 g cooked ham (one slice)
  • 300 g ground veal
  • 50 g grated Parmesan cheese
  • 1 handful of breadcrumbs
  • 1 handful of pistachios
  • 1 black truffle
  • 2 eggs
  • 1 cup dry Marsala wine
  • 3 tablespoons extra virgin olive oil
  • ½ cup milk
  • nutmeg
  • pomegranate seeds
  • a head of lettuce for garnish
  • Salt and pepper

Preparation:
Put the pieces of chicken to marinate for several hours in dry Marsala wine (preferably a whole night).

After the time of the marinade, remove the pieces of chicken marsala and the place in a large bowl just enough to hold all the other ingredients of the dough.

Put the bread soak in milk for ten minutes. Meanwhile, cut the sausage and ham cubes. Pitted pistachios and truffles cut in slices.

Ingredients:
  • 400 g arborio rice
  • 2 kg of mussels
  • 100 g of grated parmesan cheese
  • 200 g tomatoes Datterino
  • 1 tablespoon chopped parsley
  • 1 clove garlic
  • 1 onion
  • 3 potatoes
  • oil
  • salt

Preparation:
Clean mussels and open them on high heat in a covered container for a few minutes. Discard the shells, collect all the liquid from the mussels, filter it several times to remove sand and dirt.

Peel the potatoes, slice them finely and blanch 2 minutes in boiling salted water, drain and let cool.

Chop garlic and parsley.

Clean the tomatoes and cut them in half.

Slice the onion and place it on the bottom of a baking pan, cover with a layer of potatoes, mussels, garlic and chopped parsley, grated Parmesan cheese, olive oil and salt, half of the rice. Make a new layer starting from potatoes, finish with the rice and cover with the remaining potato slices, sprinkle with Parmesan cheese, garlic and parsley, salt and oil.

Pour the liquid on the preparation of the mussels and add water if necessary to get the wire to cover potatoes.

Cover the cake pan with aluminum foil and bake at 200 degrees for about 20 minutes, making sure the rice absorbs the liquid completely. When almost cooked remove the aluminum and to brown the top.

Piedmontese Ravioli With Cream of Mushroom

Information:
Servings: 6

Ingredients:
  • Browse 500 g white flour 00
  • 5 eggs
  • 1 pinch of salt Filling 300 grams of veal
  • 300 grams of pork
  • 1 cup red wine (or white)
  • 1 carrot
  • 1 rib celery
  • onion
  • 1 clove of garlic
  • 1 ball spinach (or escarole leaves boiled and drained)
  • 2 eggs
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • bunch herbs (rosemary sage thyme)
  • nutmeg
  • salt and pepper sauce 500 grams mixed mushrooms, fresh (or frozen)
  • 2 cloves garlic
  • 1 bunch parsley
  • 1 cup vegetable broth (or cream)
  • 300 g tomato past
  • 4 tablespoons extra virgin olive oil
  • chilli

Preparation:

Filling
First cook the meat. Put two tablespoons of oil in a saucepan, add the two pieces of meat and brown on all sides over high heat. Pour the wine and let it evaporate and then add the vegetables peeled and chopped, the garlic and bouquet garni. Add salt, cover the saucepan and cook over moderate heat. Occasionally turn the meat.

When the meat is cooked in the meat grinder pass it, together with the cooking juices with various vegetables and spinach previously boiled and squeezed.

Put the mixture in a bowl. Add the eggs, Parmesan and a good grating of nutmeg.
Correct the salt and pepper and mix all ingredients well.

Puff Pastry

Place the flour on work surface. Add the eggs and a pinch of salt. First started to mix with a fork and then with your hands. Work until the dough is smooth and homogeneous. Make a ball. Cover it with plastic wrap and let rest for at least an hour.

Shoot the ball of dough, rest it on the work surface dusted with flour and roll it out manually with a rolling pin or with the machine to pull the dough. In any case, you have to pull a sheet at a time, leaving the rest of the dough well covered to prevent drying out. Place the strip of pastry on work surface and arrange the filling on it forming lumps aligned at a distance of about three centimeters from each other. Cover with another strip of dough. Pressed a pile of dough and cut with the scroll wheel and another special individual mounds covered with dough into little squares. Put them on a towel or on a tray dusted with flour. Proceed this way until the end of the dough.

Sauce
Chop the mushrooms properly cleansed. Put them in a pan with the garlic and two tablespoons of oil. Add salt and pepper, add parsley and cook slowly covered pan for about ten minutes. If necessary, add a few tablespoons of vegetable broth. When cooked, set aside a bit of mushrooms for garnish the dish. Add the remaining broth (or cream) with mushrooms and the whole emulsified with an immersion blender.

In another pot you flavor the tomato sauce with two tablespoons of oil, a clove of garlic and a pinch of pepper.

A few minutes before serving, throw the agnolotti in a pot of boiling water and salt. Let cook for a few minutes. Drain the ravioli pulling out of the water with a slotted spoon.

Prepare the dish: Place the bottom of the pot a few tablespoons of cream of mushroom ravioli have over the well-drained, add a spoonful of tomato sauce and garnish with the remaining mushrooms and a sprig of parsley.

Tips:
  • For the filling is fine to use boiled or dell'arrosto advanced.
  • The meat of the filling should not be chopped too fine. It would be better to use the meat grinder manual, instead of the electric blender.
  • There are special molds on the market to make the ravioli that facilitate the work.
  • If you make ravioli with a certain advance of their cooking, do not store in the refrigerator, but put them in the freezer and throw them at the time of cooking in the pot still frozen.

  • 2 zucchini mediegrandi

Preparation:

Eggplant Stuffed with Tuna

Ingredients:
  • 4 aubergines not too large, elongated
  • 160 g of tuna in oil
  • 100 g of spicy provolone
  • 125 g breadcrumbs
  • 50 g grated Parmesan cheese
  • 4 eggs
  • 1 cup tomato sauce with basil
  • extra virgin olive oil
  • salt

Preparation:
Wash, mark and cut the eggplants in half lengthwise. Digging with the help of a spoon, leaving only half a centimeter of flesh and put the proceeds to cook in boiling salted water for ten minutes. Strain the pulp and put in the same water to cook the eggplant cooking emptied, leaving only a few minutes to maintain the shape.

Firm two eggs, let cool and then cut each into 4 wedges.

Cream of Broccoli Soup

Information:
Servings: 6

Ingredients:
  • 1 green broccoli (about 1 kg)
  • 1 onion
  • 1 clove of garlic
  • extra virgin olive oil
  • vegetable broth (optional)
  • 1 cup milk (optional)
  • 100 g cottage cheese (optional)
  • salt and pepper

Preparation:
Clean the broccoli, remove the tough outer leaves and ridges. Divide oatmeal and wash them under running water. Put them in a colander and let drain for a few minutes.

Slice the onion and fry together with a clove of garlic in a pan with the edges a bit 'high where you put a couple of tablespoons of oil.

Add the broccoli flakes and cook for a few minutes, add salt and then cover the broccoli with hot water or broth if you want the cream is tastier. Put the lid to the pan, reduce heat and simmer for about half an hour.

Once cooked remove the garlic and remove a few flakes of broccoli for the decoration of dishes.

Take the blender and blend the broccoli right in the saucepan and reduce it all in cream.

The cream is ready to be served.

Tips:
  • Depending on whether you want the cream more or less creamy you need to increase or reduce the cooking liquid (water or broth).

Ingredients:
  • butter
  • garlic
  • skinless sausages
  • mushrooms
  • flour
  • white wine

    Chocolate Cake Without Flour

    Information:

      Ingredients:
      • 250 gr. walnut kernels
      • 200 gr. sugar
      • 6 eggs
      • a tablespoon of rum
      • grated rind of lemon and orange
      • apricot jam (for coverage)
      • 75 grams tablespoons unsweetened cocoa powder (for coverage)
      • 60 gr. sugar (for coverage)
      • few drops of vinegar (to cover)
      • water
      • 200 gr. whipped cream (for coverage)

      Preparation:
      Chop the walnuts with a tablespoon of sugar.

      Whisk the zest of half orange and half lemon with one tablespoon of sugar.

      Fit 4 egg yolks and two whole eggs with 150 grams of sugar, grated orange and lemon peel and rum. When the mixture is well-fitted to combine the chopped walnuts. Whip the egg whites lightly and add to egg mixture and nuts stirring from the bottom up not to dismantle it.

      Pour the mixture into a buttered and floured. Bake at 180 degrees for about 45 minutes. Remove from oven and invert the cake on a wire rack to cool a couple of hours.

      Prepare the frosting: Put the fire of bitter cocoa powder, sugar, 1 cup of water and a few drops of vinegar. Bring to a boil stirring constantly then turn off and cool, m not completely.

      Place the cake on a serving dish, spread on the surface of a thin layer of apricot jam and spread the icing with chocolate.

      Whip cream, sweetened with two tablespoons of powdered sugar, then put it into a syringe for sweets and form a grid on the surface of the cake. End the seal with some walnuts open in half, placed along the edge.
